Ingredients :
1 garlic clove, finely grated
2 teaspoons sesame oil
1/4 cup (60ml) soy sauce
2 x 180g scotch fillet steaks, trimmed
150g snow peas, trimmed
250g frozen podded edamame (see note), skins removed
1 tablespoon sweet chilli sauce
1 tablespoon sesame seeds, toasted
Method :
Step 1 : Mix garlic, sesame oil and 2 tablespoons soy sauce in a bowl, then use to coat steaks. Heat a non-stick frypan over medium heat, add steaks and cook for 4 minutes (reduce heat if the marinade starts to burn). Turn and cook for a further 1-2 minutes for medium-rare, or until done to your liking.
Step 2 : Meanwhile, cook snow peas and edamame in a saucepan of boiling salted water for 1-2 minutes until just tender, then drain and refresh in cold water. Mix chilli sauce with remaining 1 tablespoon soy in a bowl to make a dressing.
Step 3 : Thickly slice steak and serve with snow peas and edamame. Serve topped with sweet chilli dressing and sesame seeds.
